Ingredients

For the chicken:

  • 2 tsp biryani masala powder
  • Salt to taste
  • 1 tsp ginger garlic paste
  • 2 tbsp oil

  • 2 cups basmati rice
  • 1 tsp shahi jeera
  • 4-5 green cardamoms
  • 4-5 cloves
  • 1-inch cinnamon stick
  • 1 black cardamom
  • Salt to taste
  • Water as required

For the biryani:

  • 3-4 tbsp ghee
  • 1 cup sliced onions
  • 1 cup chopped tomatoes
  • 1 tsp ginger garlic paste
  • 1 tsp red chili powder
  • 2 tsp biryani masala powder
  • Salt to taste
  • 1 cup chopped coriander leaves
  • 1 cup chopped mint leaves

Directions

For the chicken:

  1. In a mixing bowl, add yogurt, turmeric powder, red chili powder, coriander powder, cumin powder, biryani masala powder, salt, and ginger garlic paste. Mix well.
  2. Add chicken pieces to the bowl and mix well to coat the chicken with the marinade.
  3. Marinate the chicken for at least 2 hours, preferably overnight.
  4. In a pan, heat oil and add the marinated chicken.
  5. Cook the chicken until it is tender and cooked through, about 20-25 minutes.
  6. Remove from heat and keep aside.

For the rice:

  1. Wash basmati rice in cold water and soak it in water for 30 minutes.
  2. In a pot, heat ghee and add shahi jeera, green cardamoms, cloves, cinnamon stick, and black cardamom.
  3. Once the spices release their aroma, add the soaked basmati rice.
  4. Add salt and enough water to cook the rice.
  5. Cook the rice until it is 80% done, then drain the water and keep the rice aside.

For the biryani:

  1. In a separate pan, heat ghee and add sliced onions.
  2. Fry the onions until they are golden brown.
  3. Add chopped tomatoes and ginger garlic paste. Cook until the tomatoes are soft and tender.
  4. Add red chili powder, biryani masala powder, and salt. Mix well.
  5. Add the cooked chicken to the pan and mix well with the masala.
  6. Add chopped coriander leaves and mint leaves. Mix well.
  7. Layer the rice on top of the chicken masala.
  8. Sprinkle lemon juice on top of the rice.
  9. Cover the pan with a tight-fitting lid and cook on low heat for about 20-25 minutes.
  10. Once done, remove from heat and let it rest for 5 minutes.
